So, on days when you are not in the mood to place an online cake order of chocolate cake, strawberry cake, fondant cake; you can bake this one. It’s a detailed recipe, read it carefully. Do not miss any step because you surely want to treat your taste-buds with something out of the world.

For the cake:
- 1 medium Orange
- 140g raisins
- 125 ml vegetable oil
- 115g wholemeal flour
- 1 tbsp baking powder, plus a pinch
- 1 tbsp baking soda
- 1 tsp ground cinnamon
- 140g white sugar/brown sugar
- 280 g grated carrots
- 2 eggs
- 115g self-raising flour
For the Frosting
- 100g light, soft cheese
- 3 tbsp sifted icing sugar
- 1/2 tsp finely grated orange zest
- 1 1/2 tsp lemon juice
Step 1: Preheat the oven and grease the square cake pan with butter and flour. If not a square cake pan, you can take a cake pan of any shape.
For Cake batter: Finely grate the zest from the orange and squeeze 3 tbsp of juice. Pour the juice over the raisin in a bowl, stir in zest, then leave to soak while you make the cake.
Step 2: Mix the flour with 1 tbsp of baking powder, baking soda, and cinnamon.
Step 3: Separate one of the eggs. Put the white in a small bowl and yolk in the large one. Break the remaining whole egg in the yolk, then tip in the sugar. Whisk for 1-2 minutes, until thick and foamy. Slowly, pour in the oil and mix at low speed until combined well.
Step 4: Tip in the flour mixture, half at a time, and gently stir into the egg mixture. The mixture will be quite stiff. Put in a pinch of baking powder in with egg white and whisk to soft peaks
Step 5: Fold in the grated carrots, raisins (any liquid) into the mixture. Gently fold in the whisked egg white, then pour the batter into the cake tin. Bake for 1 hour until risen and firm or until the skewer comes out clean. Let it cool.
Step 6: For the Frosting, stir soft cheese, icing sugar, and orange zest together–don’t overbeat. Stir in the lemon juice.
Step 7: Spread the frosting over the cake and cut it into square pieces. You can store it for upto 5 days in an air-tight container uniced or icing one in the refrigerator.
