Chocolate Fudge Frosting

  • 1 cup (230 gm) unsalted butter, softened to room temperature
  • 4 and ½ cups (540 gm) confectioners’ sugar
  • ½ cup (120 ml) whole milk
  • 1 tbsp light corn syrup
  • ¾ cup (65 gm) natural unsweetened or dutch-process cocoa powder
  • ⅛ tsp salt
  • 1 and ½ tsp pure vanilla extract
  • Optional: rainbow sprinkles

Recipe / Instructions

  • Preheat the oven to 350 degrees F. Oil and delicately flour a 12*17 inch half sheet container or a 9*13 inch quarter sheet container. Keep it aside.
  • Whisk the cake flour, heating soda, salt, and baking powder together in a big bowl. Put it aside.
  • Utilizing a handheld or stand blender fitted with a whisk connection, beat the sugar and butter together on high speed for three minutes. Scratch down the sides and up the base of the bowl with an elastic spatula. Turn the blender down to medium-fast and beat in the eggs and vanilla extract until mixed well. Scratch down the sides and up the base of the bowl. Beat in the sour cream.
  • Include ½ of the cake flour blend/dry ingredients and ½ of the milk and beat on low speed until mixed well. Include the remaining dry ingredients and milk and beat on low speed until mixed. Don’t overmix this batter. The batter will be smooth and somewhat thick. You may need to whisk everything by hand to ensure there are no lumps at the base of the bowl.
  • Pour the cake batter into the prepared container. Smooth it out into a flimsy, even layer. For a 9*13 inch sheet cake, bake for 36 to 40 minutes or until the top is brown and a toothpick inserted in the centre comes out clean. For a 12*17 inch sheet cake, heat for 20 to 22 minutes or until the top is gently baked and a toothpick inserted in the centre comes out clean. With either size, rotate the cake baking containers once or twice during the baking process.
  • Remove the cake from the oven and invert it on a wire rack to cool off totally.
  • In the meantime, make the icing. Using a handheld or stand blender fitted with a whisk connection, beat the butter on high speed until smooth, pale, and velvety, around two minutes. Utilizing a sieve, filter the confectioners’ sugar and cocoa together. Include the sugar/cocoa blend to the butter and beat on low speed for 20 seconds. Stop the blender and include the milk, vanilla, corn syrup, and salt. Beat at medium-high speed for two minutes. If the icing is thick, then you can add some extra milk.
  • Ice cooled cake and top with sprinkles. Cut and serve. Keep the leftovers in the fridge for maximum five days.
