Why Is Celery So Special?

Your parents probably forced you to eat the bland, crunchy vegetable when you were a child but why is celery so nutritious? Although it’s not seen as glamorous compared to many other superfoods, celery is actually packed full of nutrients.

Not only is celery low in calories but it is also high in fiber with high water content. It also contains a vast amount of vitamins and minerals including vitamin K, magnesium, potassium, and vitamin C. According to the University of Michigan, one cup of celery can provide 30% of your daily intake of vitamin K.

Another reason celery is so special is that it retains most of its nutrients even when you steam it.  When you steam celery, it retains up to 99% of its nutrients compared to when boiled or blanched. Celery also keeps really well in the refrigerator and can last up to two weeks.
